Roasted Rosemary Carrots

As I have mentioned on the other carrot recipes posted, I went to Costco and bought a HUGE bag of carrots. We have been trying several versions to change them up and so far, each has been equally as delicious. This version was my husbands favorite. The kids ate them up too, so once again, I will be adding this to my list of veggies to make again, : )


Baby Carrots (I used a few handfuls, you can use however many you need)
1 tbsp olive oil
1/2 tbsp minced Rosemary
1/2 tsp salt
Pepper, to taste


Preheat oven to 400. Toss carrots with olive oil. Place on a lined baking sheet or greased baking pan. Sprinkle rosemary, salt, and pepper on carrots and toss until evenly distributed. Place in oven for about 20-25 minutes, or until tender. Serve!
