Lime Marinated Beef and Chicken Fajitas

One of our favorite things to do when having friends over is have a cookout! Me, being raised in a traditional Mexican home, we never grilled burgers or hot-dogs. Our cook outs consisted of fajitas, beans, and rice . I actually was always surprised when people would invite me to a cookout and there were no fajitas, haha. Later in life I learned that I’m the abnormal one and everyone grills burgers and hot dogs haha. However, when I host a cookout you can be sure I mean beef and chicken fajitas! I love cooking a ton of food and having leftovers for the week. Makes a great addition to many meals. Growing up, my mom marinated her meats to pack them full of flavor. Trust me this recipe won’t disappoint! 

Ingredients for the chicken marinade :
6 large chicken breast filet thin
1/3 cup of olive oil
5 cloves of garlic, minced
1 Tablespoon of paprika
1 Tablespoon of chili powder
2 Tablespoons of lime juice
2 teaspoons of kosher salt
2 teaspoons of pepper
Beef marinade:
1.5 lbs of  beef flank
1/3 cup of fresh lime juice
1/4 cup of beer
2 cloves garlic, minced
1 tablespoon of chopped cilantro
1 teaspoon of dried crushed oregano 
2 teaspoons of ground cumin
1 teaspoon of freshly ground black pepper
Directions :
Whisk together marinade ingredients in a bowl. Do this separately for each one.  Pour marinade into a resealable bag, and add your meats. Squeeze the air out of the bags. seal the bags and massage the meats to get the marinade in .Marinate in the refrigerator 8 to 24 hours. Heat up your grill. Beef takes about 8 minutes to cook and chicken 10-12 . Turn meats halfway through the cook time to prevent burning. Take off grill and enjoy !
