My daughter Emelee will be 8 weeks old on Thursday. I can’t believe how fast the time is flying by. With two other little ones running around my husband has been helping me make some meals if I get caught up with the baby. One night he made these tuna melts and they were just perfect. When I worked I use to envy stay at home moms because they always looked so fit. I use to think it was because they had time to exercise, now I know it’s because they run around chasing kids and have no time to eat. So pass this recipe on to the hubby and enjoy a night off.
3 plain bagels
2 cans of white albacore tuna (makes 6)
2 tablespoons of mayonnaise
1/2 cup of chopped onion
1 tomato sliced
1/2 a cup of shredded cheddar cheese for topping
A small hint of cayenne pepper
Salt and pepper to taste
Preheat oven to 375. Place bagels on a non stick cookie sheet. Drain tuna and place in a mixing bowl. Add mayonnaise, onion cayenne pepper, salt and pepper. Top off each bagel with the tuna mixture. Place your tomato slices on top of the tuna mixture. Sprinkle the tops with cheese. Place in the oven for about 10 minutes or until the cheese melts . Take out and Enjoy!
