Pesto Sauce

Making pesto has always meant that I buy the store packet of “pesto” and make it that way. If you have ever tried the store bought mix, you know that it really isn’t too similar to a homemade version. It is much more watery/oily, and the pesto/Basil flavor is not as strong. Once I grew Basil in my garden last year, I came up with a yummy Pesto, and from there, I now only make my own version. I find that it is much more flavorful and coats the pasta much better. This version is quite simple. You can have it ready to go within five minutes!! That is quicker than the store bought mix!!!

1 1/2 cups fresh Basil
3-4 garlic cloves, peeled and crushed
1/2 cup Grated Parmesan Cheese
1/2 cup Extra Virgin Olive Oil
Pinch of Salt
1/4 cup Pine Nuts (I didn’t use these as I didn’t have any, this is optional)
Feta Cheese (optional if using with pasta)
Place all ingredients in a food processor and blend until smooth. Use a spatula to scrape the sides about halfway through. Adjust sauce to liking if needed (add more oil if too thick). Pour sauce over pasta, bread, pizza crust, panini, etc.

How long would this last in the fridge?

About a week, but you could freeze it as well :)
