Chicken Taco Melts

When my husband and I were first dating, one of our “dates” was to Taco Bell. I know what you are thinking, “gross” right? Well, we were young, I was only 18, and had a slight love of Taco Bell. That has since changed, but I will still admit, every now and then, I like it haha!! Anyhow, when we got there, he ordered chicken tacos. I had never heard of chicken tacos. I knew of beef, steak, pork, but not chicken. I was quite curious and decided I needed to try them. Wow! Chicken tacos quickly became my new favorite version of taco. Once we got married, I came up with a few versions to make them at home. The slow cooker version is our favorite, but there are several others we make too!! After mastering the chicken taco, I started looking for ways to change it up. This version was a huge success since it made them more kid friendly. It seals the chicken mixture into a biscuit, allowing my kids to eat it without the shell breaking, chicken falling out, etc. Definitely try these if you like tacos!!


2 tbsp Taco Seasoning (homemade or 1 packet from the store)
2/3 cup water
1/4 cup Salsa
2-3 chicken breasts, cooked and shredded
1 can of biscuits (I used Pilsbury Grands)
1 cup Mexican Blend cheese
Sour Cream, optional


In a saucepan, heat taco seasoning, water, salsa, and cooked chicken until liquid is dissolved. Press each biscuit, to flatten it. Fill each biscuit with taco meat and about 1-2 tbsp cheese. Fold the biscuit in half and seal edges. Place on a greased cookie sheet and bake in a preheated oven (375) for 10-13 minutes, or until golden brown. Serve with a side of Sour Cream.
