Chicken Adobo

Some of the joys of having a baby is all the pampering from friends and family that comes along with it. In the first few weeks after having baby Emelee , friends would drop by and bring us dinner. One night a young couple my husband and I mentor brought over Pork Adobo. Charlie is from the Philippines and I had been dying to try some traditional food. Needless to say it tasted amazing and I found myself craving it again. I just had to call and get the recipe. I hadn’t had a chance to go grocery shopping yet so He told me I could make it with chicken too . It was amazing! Has a only a few ingredients and takes 20 minutes to cook! Can’t beat that. 

3 chicken breasts cut into smaller pieces
1/2 a cup of white vinegar
1/2 a cup of soy sauce
2 bay leaves
 1 teaspoon of pepper
Place all Ingredients in pan over medium heat covered for 20 minutes, checking it and stirring it about every 5 minutes or so. Serve with Steamed rice . To add flavor pour some of the juices over the rice . Enjoy!
