By now, I think you all know that I am in love with tater tot casseroles. We have a few other versions posted on our blog, and now we add this one to the list! My kids love them due to the tater tots. This casserole was simple to make, had enough for leftovers the next night, and was quite the “comfort food” dinner. I made it on a night that my son got home late from school, and we were pressed for time before heading off to baseball. I definitely encourage you all to try it!!!
1 lb ground turkey (you can use beef if desired)
1 medium onion, chopped
1 can cream of chicken soup (any version works, mushroom, celery, etc)
16 oz frozen tater tots
1 1/2 cups shredded cheddar cheese
2 tsp minced Garlic
Salt/Pepper to taste
In a skillet, cook turkey (or beef) with onion, until no longer pink and onion is tender. Drain fat and put meat mixture in medium bowl. Mix in the cream of chicken soup, salt, and pepper. Pour into a casserole dish. Sprinkle minced garlic on top of meat mixture. Place tater tots on top. Bake in a preheated oven (375) for about 30-40 minutes, or until bubbly. Remove from oven, sprinkle cheese on top, and place back in oven until cheese melts.
