Beef and Tomato Tortellini Soup

I was looking for something to make with the many cans of tomato soup I had in my pantry and came across a similar recipe online. I ended up tweaking it a bit since I was missing some of the ingredients but the outcome was oh so good! My husband and I love soup year round, especially since we live in Houston and don’t get much of a winter to enjoy them anyways. I made this for lunch for him one day and had the whole batch gone within half an hour. I’m definitely repeating this recipe.

1 (9 oz ) package of beef and sausage tortellini
2 cans (10.75 oz ) of condensed tomato soup
2 cups of chicken broth
3 cups of milk
1/2 a cup of flour
1 teaspoon of onion powder
1 teaspoon of garlic powder
1 teaspoon of dried basil
1 teaspoon of cayenne pepper
Salt to taste
1/2 a cup of Mozzarella cheese shredded for cooking and topping

Directions: cook tortellini according to package instructions. In a separate pot combine the rest of the ingredients over medium high heat. Stir frequently for about 5 minutes. Drain tortellini and add to soup mixture. Stir in the cheese and save some for toppings. Taste to see if additional salt is needed. I separated a smaller batch and added extra cayenne pepper for a good kick. Enjoy!
