Sweet Potato and Black Bean Burritos

I have heard about a lot of families doing “Meatless Monday’s”. I have always tried to include some type of meat in all my dishes, but decided to venture out and try doing a few meals meat free. It has been quite fun, and allows for a lot of variety. 
My family loves sweet potato. In fact, when my kiddos were babies, one of their most favorite things was sweet potato mashed up. My two boys ate lots of it, to the point where they had slightly orange cheeks as babies, hehe!! This meal is quite easy, and tasty. My kids preferred it without the tortilla, so how you serve it is up to you!!


1 can (15 oz) black beans, rinsed
2 large sweet potatoes, rinsed, peeled, and cut into cubes
1/4 cup vegetable broth/stock
2 tbsp lime juice
1/2 tsp ground coriander
1 tsp ground cumin
2 tsp minced garlic
Salt/Pepper to taste
Sour Cream/Shredded Cheese/Cilantro


Spray your slow cooker with cooking spray or olive oil. Put beans, sweet potatoes, vegetable stock, lime juice, and spices into slow cooker. Cover and cook on high for about 3 hours, until sweet potatoes are soft. Once cooked, serve in a tortilla with sour cream, cheese, cilantro, etc.
