I saw a similar recipe online, and I had to try it,however I tweaked it with ingredients I had on hand . I placed this recipe in the slow cooker in the morning and it was good to go for lunch! It was really good and flavorful. I’m a last maker, so when I can check off plan and cook lunch off my list before I eat breakfast it totally makes my day. Great meal for working moms that want o enjoy that Saturday time with the family instead of over the stove and washing a mess of dishes.
2 tablespoons of butter
1/3 cup of chicken broth
1 large white onion, sliced
2 green bell peppers, sliced
1.5 pounds of skinless chicken breast strips
2 tablespoons of Emeril’s Chicken Rub
sliced Mozzarella cheese
Bolillo rolls (usually in the bakery section ) but you can use regular rolls
Slat and pepper to taste
Spray a 3 – 4 quart slow cooker with non-stick cooking spray and turn it on to low heat.
Add butter, onions , green peppers and chicken broth. Toss chicken with the seasoning, and salt and pepper then add to slow cooker.Cover and cook for 5 hours.Place chicken, onion, and peppers on then white bolillos with a slice of cheese melted on top.Enjoy!
