Yum Yum Yum!!! If you are like me, the last thing you want to do on a busy day, is have to worry about dinner. If you are short on time, try this yummy slow cooker meal out. Its pretty simple and you can change it up any way you want to make it to your desired tastes. Serve it over tortilla chips or in a tortilla shell and you have dinner served! My kids LOVE tortilla chips, so they ate theirs as “nachos”. My hubby and I preferred it in a tortilla with sour cream! Either way, you’ll love it!!
1 lb chicken breast (frozen or thawed is fine)
1 can (14.4 oz) can diced tomatoes with green chiles
1 can ( 15 oz) black beans, rinsed
2 cups frozen corn
1/4 cup chopped cilantro
1 can (14.4 oz) chicken broth
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
2 tbsp taco seasoning (or a packet from the store)
1 tsp cayenne pepper (add more or less if desired)
Tortillas or Chips
In your slow cooker, place chicken on bottom. Add in remaining ingredients on top of chicken, excluding chips or tortillas. Cover slow cooker and allow to cook on low 6-7 hours, or high 3-4 hours. Once cooked, shred chicken using a fork and serve on chips or in tortilla.
