Oven Roasted Fresh Herb Chicken

This recipe looks scary at first, but it really is pretty simple. It made my house smell amazing! My husband walked in after work to a clean home with awesome aromas coming from the oven. All I needed was an Apron, heels and my kids to have their hair slicked to the side waiting at the door , to be a considered for housewife of the year. The veggies were my kids favorite part. Have fun with the leftovers too!

For chicken:
1 (6 1/4-pound) chicken, rinsed and patted dry
salt and black pepper
5 sprigs fresh rosemary
5 sprigs fresh thyme
1 lemon, quartered

For butter:
6 tablespoons unsalted butter, at room temperature
3 garlic cloves, minced
2 teaspoons chopped fresh rosemary leaves
2 teaspoons chopped fresh thyme leaves
1/2 teaspoon fresh lemon juice
1/2 teaspoon salt
1/2 teaspoon black pepper

For vegetables:
3 tablespoons extra-virgin olive oil
6 baby red potatoes, halved
6 medium carrots, peeled and halved lengthwise
2 large shallots , peeled and halved
1 clove garlic, peeled
1 teaspoon chopped fresh rosemary leaves
1 teaspoon chopped fresh thyme leaves
1 teaspoon of salt
1/2 teaspoon black pepper
1/2 cup chicken broth

Place an oven rack just below the center of the oven. Preheat the oven to 400.
In a small bowl, combine the butter, garlic, rosemary, thyme, lemon juice, salt and pepper until smooth. Get your chicken patted dry and ready . let it sit for 15 minutes so there is no moisture and it gives you the most crispy skin possible. Season the chicken with salt and pepper. Rub your butter mixture all over the chicken, making sure to get under the skin and inside the cavity. Place the rosemary, thyme and lemon quarters in the cavity. Place the chicken in a roasting pan. In a separate large bowl, toss together the oil, potatoes, carrots, shallots, garlic, rosemary, thyme, salt and pepper.
Place vegetables around the chicken in the roasting . Add the broth and roast until the vegetables are tender about 1 1/2 hours. Let it cool for 20 minutes.
Transfer the chicken to a platter and enjoy!
