French Breakfast Puffs

A few weeks ago, I hosted a muffin swap. I am always on the hunt for a yummy muffin recipe to add to the collection. This one is a basic cinnamon sugar type muffin, but it is perfect for breakfast since there’s not too much to it and its not too “heavy” of a muffin.

3 cups all purpose flour
3 tsp baking powder
1 tsp salt
1/2 tsp ground nutmeg
1 cup sugar
2/3 cup shortening
2 eggs
1 cup milk
2 sticks butter
1 1/2 cups sugar
3 tsp ground cinnamon

Preheat oven to 350. Lightly grease muffin tin. In a large bowl, mix together flour, baking powder, salt, and nutmeg. Set aside. In a separate bowl, cream together the sugar and shortening. Add in the eggs and mix well. Add in 1/3 flour mixture and 1/3 milk mixture. Beating well, continue process until both mixtures are combined. Fill muffin cups about 2/3 full. Bake in oven 20-25 minutes or until golden brown. To make coating, melt the butter in a bowl. In a separate container, combine sugar and cinnamon. Dip the warm muffins in the butter, coating thoroughly. Then roll muffin in the cinnamon sugar mixture, make sure to really coat it. *These are amazing when warm!!

These were light and fluffy, I made mine in muffin cups since I was hosting a muffin swap, I highly recommend you grease the tin instead so you can roll the entire muffin through the coating and not just the tops
