This dinner is something the family will devour! Trust me! I have a family of 5 and even my youngest was shoveling this stuff in!! A few nights ago, I realized I totally forgot to think about dinner plans. I was at my son’s bus stop picking him up and was trying to think of quick meals to make. I had taken out some beef already in preparation for another meal, so I knew I had to make something with beef haha! After throwing some ideas around in my head, this meal came to mind and it was a definite success.

1 lb ground beef
2 tbsp taco seasoning (or 1 packet from the store)
1 can Campbells Condensed Tomato Soup
1 1/2 cups water
1 1/2 cups uncooked instant white rice
Shredded Cheese/Lettuce/Sour Cream
In a skillet, cook beef and taco seasoning together until meat is brown. Drain fat. Add soup, water, and rice and heat to boil. Cover and cook over low heat for about 8 minutes, or until rice is tender and liquid is absorbed.
Place desired amount of tortilla chips on plate. Top with meat mixture. Add desired toppings onto meat such as lettuce, cheese, sour cream, salsa, etc.
