Taco Stroganoff

I absolutely love Pinterest. Majority of my recipes originate from something I have seen on there. I tend to tweak recipes a bit to add more flavor or minimize something I don’t really like, etc. I came across this one and it looked really good. The caption below it said it was kid friendly and almost tasted like nachos over pasta. That sounds interesting right? Well, it was definitely kid friendly and although I don’t think it tasted like nachos, it had that yummy Mexican food taste and my family loved it.


1 small onion, chopped
1 lb ground beef
3 tbsp taco seasoning or 1 envelope from the store
1/2 cup salsa
1/2 cup water
1 (14 oz) can Mexicorn, drained
1 (8oz) pkg cream cheese (chive and onion flavor)
1 cup shredded cheddar cheese
8 oz egg noodles, cooked and drained


Cook onions and ground beef in a large saute pan until beef is brown. Drain fat. Add taco seasoning, salsa, water, and corn to the beef mixture in pan, cook 1-2 minutes.
Add cream cheese and cheddar, cook until heated through and cheese is melted.
Serve over noodles.
