A few weeks ago, I was going through my fridge and pantry and decided to throw some stuff together and make taquitos. They were easy, yummy, and each time I make them, I can change it up a bit depending on what I have in my pantry that day. I tend to cook mine and pop them in the freezer for snacks and meals on the go!!
2 cooked chicken breasts, shredded
1 cup cheddar cheese, shredded
1 cup salsa (any kind)
Corn or Flour tortillas
Shred chicken and mix in cheese and salsa. In a pan over the stove, heat tortillas so they dont break when rolled. Spoon chicken mixture into tortillas and roll up. Place taquitos in a lightly greased 9×11 pan and bake for 30 minutes at 350. Serve.
*You can substitute marinade for salsa, add in corn or beans, any spice you desire, onion, etc.
**These are quite yummy with salsa and sour cream to dip them in.
