Tortellini vegetable soup

I had a recipe swap with some friends a few months ago and my friend Vicky brought this soup. I was in heaven! This might be one of my favorite soups hands down. It was so fast to make and my little one even loved it!

2 Tbsp Olive Oil
1 Med. Onion
1 small zuchinni, diced
1 medium carrot, diced
5 1/2 Cups Chicken Stock (or broth) whatever you have [:-)]
1 tsp dried Basil
1 bay leaf
1/2 cup canned crushed tomatoes
1/2 tsp salt
8-9 oz of Tortellini
2-3 Tbsp chopped fresh parsley
Black pepper to taste

Heat the olive oil in a medium soup pot. Add the onion, zucchini, and carrot. Saute over moderate heat for 8-10 mins, stirring often, until the onion is soft and translucent.

Add stock (or broth), Basil, bay leaf, tomatoes, and salt to the pot. Increase the heat and bring the mixture to a low boil. Cook it for 2 min. Add tortellini then reduce the heat and let it simmer for 5-6 mins longer. Gently stir in the parsley and pepper during the last minute or so.

You can garnish with shredded parmesan cheese if you like, we usually do!! And serve with a nice green salad and some yummy garlic bread!! Use whatever flavor Tortellini you want, it can be fresh or frozen! I usually use fresh.
