For dinner tonight I made Cajun Chicken Pasta. It was a huge hit!! I have another recipe for it that I had been using, but came across this one and loved that it had veggies in it too. I think this will become my new version of Cajun pasta…..the family and I loved it!!
10 oz cooked pasta (I used spinach linguine)
1 lb chicken breast, sliced or cubed (you could also use shrimp if desired)
1 tbsp olive oil
1 medium red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1/2 red onion, sliced
3 cloves garlic, minced
2 medium tomatoes, diced
1 cup chicken broth
1/3 cup milk
1 tbsp flour
3 tbsp cream cheese
Slice all your veggies and place them to the side. In a blender, mix in your milk, flour, and cream cheese. Blend until mixed thoroughly, set aside. Prepare pasta in salted water according to package directions. Heat a large skillet over medium-high heat, add in some olive oil and saute chicken. While chicken is cooking, add Cajun seasoning along with garlic powder and salt. Season to taste. Once chicken is cooked through, set aside. Add the veggies into the skillet with a bit more olive oil and allow veggies to cook a few minutes, until tender. Once veggies are tender, add in chicken broth and creamy mixture from the blender. At this point you can add more seasoning until you get it to the desired flavor. Add cooked chicken into the skillet and continue simmering 2-3 minutes. Add cooked linguine into the mixture and toss until evenly coated. Serve!!
